You'll need to make sure your driver's licence will be accepted in New Zealand. Generally, campervan rental companies do not accept provisional licences, and anybody with a licence that isn't printed in English may also need to present an International Driving Permit. All documents will need to be the original copies.

Campervans are generally categorized by 'berth'. This refers to how many people the vehicle can comfortably sleep. The type of vehicle you should hire depends on how many people you are travelling with, how much storage space you need, what amenities you'd like and where you are planning on visiting.
